So I’m not really the one to take pictures of food and post it but this time I just couldn’t resist. Feast our eyes on this! A low carb, low fat, high protein and high fiber alternative to a tortilla de patatas.
I found the recipe on cookinglight.com, but adjusted it a bit. Its super easy! Just press some pizza dough (thinly) in to a baking tin/pan, fry up whatever you want as filling (I chose onion, mushrooms, and red pepper), take 4-6 eggwhites (depending on the size of the pan) and whip them up with salt/pepper and a little bit of tomato sauce. Dump the filling in the pan and then pour over the egg mixture, put on whatever topping you want and finish off with some parmesan. Bake in the oven on ca 200 degrees celsius for ca 50 mins/til the mixture is firm. Voilá!
